KLEIN KAROO Choice Ostrich Meat produces low fat, exotic, delicious, and healthy premium quality red meat.
All KLEIN KAROO ostriches are reared in pens under tranquil conditions and pose no threat to those ostriches living in the wild. The ostrich producers, under the auspices of the KLEIN KAROO Group, practice scientific farming methods. A strict vaccination and dipping program, which is monitored by qualified vets and the KLEIN KAROO Abattoirs as well as the Directorates of Animal Health and Veterinary Public Health, ensures each bird remains healthy right up to the point of slaughtering on the set date.
The global demand for ostrich meat has escalated with the international trend towards healthier eating, as it is virtually fat free and low in calories and cholesterol but very rich in protein.
The prime cuts, fillet and steak, are versatile favourites for tasty roast dishes, delicious grills and superb schnitzels. Neck (for hearty stews and soups) and goulash (for stews, stirfry dishes or tacos) are increasing in popularity, as is ostrich liver from which a delectable pâtè can be made. Ostrich biltong and dry sausage is also produced.
Cuts are vacuum sealed in bags before being packaged. Meat is exported fresh, frozen as well as pre-cooked to accommodate out-of-season demand. KLEIN KAROO's unrivalled slaughter facilities include three state of the art abattoirs of which two are situated in Oudtshoorn and the latest addition, Ostriswell, in Swellendam for both ostrich and sheep processing.
Both abattoirs in Oudtshoorn are for the slaughter of ostriches exclusively. All abattoirs comply with stringent hygienic controls stipulated by importing countries. All slaughtering takes place under the supervision of a team of inspectors from the South African Directorate of Veterinary Public Health. They work closely with their overseas counterparts to ensure that international health regulations are met continuously.
